Obituary of Kay Carson

Virginia Kay (Meyers) Carson was born on June 2, 1945 in Burlington, Colorado the fourth of six children born to Blanche Lucille (Elder) and Elvaro Leon“Shorty” Meyers. Friends and family affectionately knew her as only "Kay". She died at Littleton Adventist Hospital on July 30th, 2013. Kay attended Smoky Hill School south of Burlington where her mother was a cook and bus driver and her father was custodian and bus driver. Kay’s children remember her telling stories about riding the bus with her dad when he took the other kids home from school. Kay transferred to the Burlington School when the two schools consolidated. She gave birth to her first daughter, Tracy Lynn Meyers in 1963. In her younger days, Kay worked at several restaurants and in many capacities, including the Interstate House and Carpers Café. She eventually went on to work alongside her mother at the Sale Barn and Highway Cafe. This is where she found her passion for cooking. Years later she would become a staple cook at the Western Motor Inn and Burlington Inn. Who could ever forget Kay’s cinnamon rolls, big enough to cover the plate, or her fried chicken, in which one nephew described as, “so good it would make Colonel Sanders jealous!” Kay married Robert Dean “Bob” Carson on July 1st, 1964. To this union four more children were born, Ricky Dean, Vickie Sue, Randy Dale, and Dawn Ann. Kay spent the early years of her married life being a housewife and mother. In 1973 family moved to Grand Island, Nebraska for work, but returned to Burlington in early 1976. Kay would go on to receive her GED at Fort Morgan Community College in Burlington, Colorado at the age of 55. A milestone she was very proud of and was celebrated by her family. Kay continued to work for area restaurants until 2002, at which time she gave up her career to spend more time with family and her grandchildren, which she truly adored. She would spend the next several years of her retirement dishing out doughnuts at the local bakery. Kay loved working at the bakery because it only required a few hours in the mornings and gave her time to visit with old friends and meet new ones. Whether it was at the restaurant or at home, Kay loved to cook. Often times during the holidays her children would ask what they could bring to dinner and she would reply with a simple, “just a big appetite.” Whenever Kay came to visit, someone would talk her into making cinnamon rolls or bierocks. Due to a heart attack in 2004, Kay was forced to give up working completely. Fully retiring gave her more time to travel and spend with all of her children and grandchildren. One of her fondest memories was going on a trip to California with all of her sisters. Kay was a loving wife, mother, grandmother, sister and aunt. She valued life, family, and friends. She knew no strangers and would open her house up to anyone. She truly loved life; whether it was fishing, camping, or just all of the family being together Preceding her in death were, her father and mother, Shorty and Blanche Meyers. Father-in-law and mother-in-law, Dean and Leona Carson, brother Bob Meyers, son-in-laws, Rick Winslow and Mike Kennedy, brother-in-laws, Milton Harrison and Dempsey Harris.
